Great article. I love all the historical information. I've been baking a lot of sourdough lately. I believe that the manufacture of bread and the modification of our wheat has resulted in bland tasteless bread. But it's easy to make fantastic sourdough bread at home. I found non GMO, heritage wheat, whole wheat flour at Community Grains.
