I used Linux for my school wide server. One of the things I promised Jeff when I was hired I would build a server that would allow kids to save their work from any computer at school and access it from anywhere, from both Macs and PC. Every student had their own unique login and password. At the time most Linux distros were still not that user friendly nor was I familiar with the video editing software I was counting on for my video editing class. I built all the computers for my lab so I could come under budget and still include the old Matrox Marvel breakout box that could digitize analog video. Today I could do that easily Ubuntu, but then today would would have the skill to teach a solid class in Python as well.
