The mass production of food and all the shortcuts those methods entail has ruined the quality of our food. I bake bread once a week using a natural starter. It takes hours to rise, but that does not require my attention. I can mix up a batch in minutes: 350 grams warm water, 200 grams natural starter (fermented flour and water) 18 grams salt and 500 grams whole wheat flour.
